½ a butternut squash - peeled & cubed
2-3 assorted peppers - cut into chunks
2 medium onions - peeled and quartered
Splash of olive oil - to taste
½ pack feta cheese, crumbled
Wild rocket
Prepare veggies and place in large roasting tin.
Drizzle with a little oil.
Bake in moderate to high oven, 190-200C/Gas 5-6, (turning veggies occasionally) for approximately 30-45 minutes or until almost done.
Take out of oven and crumble feta cheese over top of dish. Put back in oven for 10 minutes.
Serve on a bed of wild rocket.
Variations:
Add some diced courgettes and sliced mushrooms instead of (or in addition to) the peppers and onions.
Use diced mozzarella or halloumi or instead of the feta if preferred.
